We are seeking an experienced and dedicated Sous Chef to join our team at The Lingdale Tavern, a vibrant community-focused pub, restaurant, and coffee shop. As a Sous Chef, you will work closely with the Head Chef, ensuring the smooth running of the kitchen, maintaining high culinary standards, and supporting in the development of our seasonal menus.

This is an exciting opportunity for a passionate chef looking to further their career in a dynamic and creative kitchen environment. You will play a crucial role in maintaining the quality of our dishes, managing kitchen operations, and leading the team in the absence of the Head Chef.

Key Responsibilities:



- Assist in Menu Development: Collaborate with the Head Chef to develop, plan, and update the menu, ensuring seasonal ingredients are used and the highest culinary standards are maintained.

- Kitchen Management: Take responsibility for the kitchen during the Head Chef's absence, ensuring that all staff are working efficiently and that dishes are prepared to the highest standard.

- Food Preparation: Oversee and participate in the preparation, cooking, and presentation of dishes, ensuring that they are served on time and meet the required quality standards.

- Stock Control: Manage stock levels, assist with ordering ingredients, and ensure that the kitchen has the necessary supplies for each service.

- Training and Mentoring: Support the training and development of junior kitchen staff, ensuring that the kitchen team maintains high standards of cooking and hygiene.

- Health & Safety: Ensure compliance with health, safety, and food hygiene regulations, maintaining a clean and safe kitchen environment at all times.

- Cost Control: Assist in managing kitchen budgets, controlling waste, and ensuring portion control is maintained to keep food costs in line with targets.

- Collaboration: Work closely with the Head Chef and the management team to ensure smooth kitchen operations, adapting to the needs of the bar/restaurant and the community hub.

Person Specification:



Essential Skills and Experience:



- Experience: At least 2 years of experience as a Sous Chef, Junior Sous Chef, or a similar role in a fast-paced restaurant or pub environment.

- Culinary Knowledge: Strong knowledge of different cooking techniques, flavour combinations, and experience in preparing a variety of dishes.

- Leadership: Demonstrated experience in leading a team, managing kitchen operations, and mentoring junior kitchen staff.

- Health & Safety: In-depth knowledge of health and safety regulations in a kitchen environment, with a commitment to maintaining high hygiene standards.

- Time Management: Ability to manage time effectively, working well under pressure, especially during busy service periods.

- Menu Development: Creativity and a passion for creating new dishes, with a strong understanding of seasonal and locally-sourced ingredients.

- Communication Skills: Strong verbal communication skills, able to give clear instructions to the kitchen team and collaborate with other departments.

Desirable Skills:



- Budgeting and Cost Control: Experience managing food costs, waste reduction, and stock control.

- Qualification: Relevant culinary qualification or certification in food hygiene and safety.

Working Hours:
