We are now seeking a passionate and detail-oriented

Sous Chef

with a strong background in

Italian cuisine

to support the Head Chef in overseeing the smooth operation of our kitchens and delivering consistently exceptional dining experiences, from brunch through to special events.


Key Responsibilities




Support the Head Chef in leading the kitchen team across all service periods, including

brunch, a la carte dining, in-room dining, and special events

. Supervise the preparation and cooking of dishes, with a strong focus on authentic Italian flavours, techniques, and presentation. Ensure all menus are executed to the highest standard, maintaining consistency and creativity. Train, mentor, and develop junior chefs. Uphold the highest standards of food safety, hygiene, and HACCP compliance. Conduct regular checks on kitchen equipment and maintain safe, clean, and well-organised work areas. Monitor stock levels, oversee ordering, and minimise waste through effective rotation and storage. Contribute to menu development, including seasonal brunch dishes and bespoke event menus, ensuring innovation and creativity. Collaborate closely with front-of-house and events teams to deliver seamless guest experiences for private dining and events.

What We're Looking For




Previous experience as a

Sous Chef

(or strong experience as a Junior Sous) in a luxury hotel or high-end Italian restaurant. In-depth knowledge and passion for

Italian cuisine

, from traditional classics to modern interpretations. Proven leadership and people-management skills, with the ability to motivate and inspire a team. Strong operational focus with excellent organisational and time-management skills. Sound knowledge of food safety, allergen protocols, and kitchen operations.
