Key Responsibilities:
Culinary Operations & Kitchen Management
Assist the Head Chef in managing all kitchen activities, ensuring smooth and efficient service delivery.
Lead the kitchen team during daily service, maintaining consistent quality, presentation, and portion control.
Oversee preparation and cooking across all kitchen sections, ensuring adherence to menu specifications and standards.
Support menu planning and development, incorporating seasonal, locally sourced, and nutritionally balanced ingredients.
Team Leadership & Development
Supervise, train, and motivate kitchen staff, fostering a culture of professionalism, collaboration, and continuous learning.
Provide hands-on support and coaching to junior chefs and kitchen operatives, enabling their growth and confidence.
Promote health and safety, food hygiene, and compliance awareness throughout the kitchen team.
Quality Control & Food Safety
Ensure strict compliance with food safety, hygiene, and health and safety legislation, including HACCP.
Monitor kitchen cleanliness and organisation, maintaining a safe and efficient working environment.
Conduct regular checks of stock, equipment, and food quality to uphold Wallacea Livings premium standards.
Operational & Financial Accountability
Assist in managing stock levels, ordering, and supplier relationships to optimise cost control without compromising quality.
Support the Head Chef in maintaining accurate records, including food costs, wastage, and staff timesheets.
Contribute to budgeting processes and ensure efficient use of resources within the kitchen.
Owner Engagement & Service Excellence
Work closely with the Head Chef and wider hospitality team to tailor dining experiences that meet individual customer needs and preferences.
Help maintain the warm, respectful, and personalised service culture that defines Wallacea Living.
Represent Wallacea Living with professional appearance, language, and conduct at all times.
Build rapport with owners and guests, offering respectful and attentive service that reflects our values of dignity, care, and excellence.
Act as a supportive and visible presence in the community, helping foster a warm and inclusive atmosphere.
About You:
To be successful in this role, the Sous Chef will possess the following:
Proven experience as a Sous Chef or Senior Chef de Partie in luxury hospitality, fine dining, or premium residential settings.
Strong culinary expertise across multiple disciplines with a keen eye for detail and consistency.
Demonstrated leadership skills with experience managing and developing kitchen teams.
Excellent understanding of food hygiene, safety legislation, and best practices (HACCP).
Competence in menu planning, portion control, and kitchen cost management.
Effective communication skills and the ability to work collaboratively in a multidisciplinary team.
Culinary qualification or relevant professional training preferred.
Food Hygiene Level 2 certification minimum; Level 3 preferred.
Positive, professional attitude with a passion for delivering exceptional food and service.
