Job Description

We are currently recruiting for a Sous Chef: passionate about food; enthusiastic about making/breaking records; adaptable; for our seasonal historic Inn.

Our pub/restaurant is situated in the beautiful fishing village of Polperro, Cornwall; The Three Pilchards is the oldest pub in the village (dating back to the 16th century) and stands right on the harbour - a big tourist spot that has had families visiting for generations. We have currently held the lease for over 9 years and have developed a sustainable business model - ensuring that (despite being in a seasonal location) we can keep our Chef's in full time employment all year round with an offering that changes throughout the seasons to keep customers visiting us all year round.

Our food offering has evolved toward high restaurant quality food therefore we require a Sous Chef passionate about food and open to learning new dishes and styles of cooking to showcase in our weekly/daily specials.

Fortnightly pay by Bacs including tip share Discounted food and drink/free food on shift Flexibility with hours and work patterns Access to uniform no split shifts - we serve food all day (12 - 9pm) all year round - 3 different shift patterns are available Time and a half for bank holidays

Responsibilities



Oversee food preparation and cooking processes to ensure high-quality standards are met. Maintain a clean and safe kitchen environment in compliance with food safety regulations. Supervise kitchen staff, providing leadership and guidance to enhance team performance. Manage food production and inventory to support sustainable business practices. Collaborate with team members to deliver exceptional hospitality and dining experiences. Ensure efficient service by coordinating with restaurant staff and addressing customer needs.

Qualifications



Proven experience in food preparation and cooking within a professional kitchen setting. Strong culinary skills with a focus on food safety and hospitality. Leadership abilities with experience in supervising and managing kitchen teams. Background in restaurant operations and serving, with an emphasis on sustainable practices. Ability to effectively manage food production and maintain high standards of quality.
