Halwyn has established itself as high quality dining experience in the local Newquay area and across Cornwall, demonstrated in our inclusion in the Trencherman's Guide 2025.
Next year we will be looking to achieve more accolades alongside growing the business as a whole and continuing to provide outstanding food and service.
The Sous Chef role will be incredibly important in trying to reach these goals and therefore we are on the lookout for someone truly special; either with experience or with the drive and ambition to learn and grow.
PLEASE NOTE:
Start date for the role is around the last week of January. An interview and trial will be necessary.
What will be expected:
Leading the day-to-day operations of the kitchen alongside the head chef including fish, meat, vegetables, sauce etc preparation, paperwork, quality control and cleanliness.
Maintaining consistently high standards in taste, presentation, and quality across all kitchen offerings.
Ensuring compliance with food safety, hygiene, and health regulations.
Managing stock, procurement, and costs effectively while maintaining food excellence.
Supporting the training and professional development of all team members.
Leadership capabilities, with a proven ability to run all sections, including commanding the pass calmly and efficiently.
Flexibility to work varied shifts, including weekends, holidays, and covering other roles in the kitchen when needed.
Halwyn:
Halwyn is a high quality restaurant attached to a 15 bay state of the art driving range. Opened summer 2025 on a family farm, Halwyn is a new dining destination set in a modern farmhouse with countryside views, rustic charm, sunset terrace and landscaped mini golf.
We serve seasonal, locally sourced food--highlighting the beef from our farm, South Devon Cattle--prepared and cooked with care. Our menu also includes locally caught sustainable fish, fresh pasta and sauces and stocks from scratch. The Josper grill is used throughout the menu to provide a barbequed, smokey flavour to many of our dishes.
