Job Description

We are seeking a talented, creative, and highly experienced Sous Chef with a strong background in authentic Italian cuisine, with particular expertise in crafting fresh pasta, traditional pizzas, and exquisite desserts. This pivotal role involves supporting the Head Chef in all kitchen operations, ensuring exceptional quality and consistency in our specialised offerings, and leading the kitchen brigade to deliver outstanding dining experiences.Key Responsibilities

Specialised Culinary Expertise:



Master the preparation and cooking of a diverse range of fresh pasta dishes Oversee the entire pizza section, demonstrating skill in dough preparation, hand-stretching, and baking in our wood fired oven to maintain high quality and consistency. Lead the pastry and dessert section, including producing all items from scratch, developing new recipes, and ensuring artistic presentation. Ensure all food items meet the restaurant's standards for taste, presentation, and portion control, from appetisers to desserts.

Kitchen Management & Leadership:



Act as the second-in-command, stepping in to manage the entire kitchen and run service smoothly in the Head Chef's absence. Supervise, motivate, and train all kitchen staff in food preparation techniques, cooking methods, and kitchen procedures, fostering a positive and professional environment. Assist in creating staff schedules and rotas, ensuring appropriate staffing levels are maintained within budget.

Operational & Administrative Support:



Manage inventory and stock control for relevant sections, including ordering supplies, monitoring stock rotation, and minimising waste. Collaborate with the Head Chef on menu development, bringing creative ideas for seasonal pasta and dessert options. Ensure strict compliance with all food safety, hygiene (HACCP), and health and safety regulations, maintaining a clean and organised kitchen area.
Qualifications & Experience

Proven experience as a Sous Chef or Pastry Sous Chef in a quality Italian restaurant setting is essential. Expert technical knowledge of various cooking techniques and a deep understanding of Italian cuisine, with a keen eye for detail in both savoury and sweet dishes. Strong leadership, communication, and problem-solving skills, with the ability to work calmly and effectively under pressure. A relevant culinary qualification/diploma and valid food hygiene/safety certification are required. Flexibility to work varied shifts, including evenings, weekends, and holidays, is a must.
Job Types: Full-time, Permanent, Fixed term contract
Contract length: 12 months

Pay: 15.00-16.00 per hour

Expected hours: 25 - 45 per week
