The Sous Chef supports the Head Chef in the day-to-day operation of all kitchen areas, including the hotel restaurant, banqueting, and weddings. This role is responsible for ensuring the consistent delivery of high-quality food across all outlets, supervising and training kitchen staff, maintaining compliance with health and safety standards.

THE ROLE



Assist the Head Chef in overseeing kitchen operations for all hotel Food outlets, including hotel restaurant, conference & banqueting, afternoon teas, weddings & special events Supervise daily food preparation and production to ensure consistent quality and presentation. Support with the training, coaching, and development of the kitchen team. Ensure all food safety, hygiene, and health & safety regulations are followed (e.g., HACCP, EHO compliance). Work closely with the events and front-of-house teams to plan for and execute high-volume functions. Monitor kitchen inventory and assist with ordering, stock rotation, and waste management. Store food items correctly, including labelling and rotation in line with kitchen procedures. Lead the kitchen in the absence of the Head Chef, ensuring service standards are maintained. Help ensure consistent execution across multiple simultaneous events and services when required.
