rural edge of Winchester.

Who are we?

The Shoe, Exton is a 50 cover pub restaurant in a beautiful village Exton with rolling hills and the river meon running through the village

We own and operate a farm and hope to start using produce from our own market garden.

With feast & BBQ events planned thoughout the year and a truly seasonal menu this is an rare opportunity.

As a team of likeminded individuals with agricultural, hospitality and creative backgrounds, we're proud to have high quality, local produce (produced from our farms and partners where possible) at our core.

What are we looking for?

We're on the hunt for passionate, fun and hardworking individuals who pride themselves on all aspects of quality, from customer service to keeping our space beautiful. Ideal candidates will work well in small teams and adapt to dynamic and varying working environments.

Hours - 40-50 p/w

Pay - based on experience

Job Summary

The sous chef will assist the head chef in charge of the preparation of food on a daily basis, heading up the curation of menus and dishes from seasonal produce stocked from our farm shop, and the maintenance of high standards of quality, food safety and creativity.

Roles and responsibilities:

- Developing seasonal menus in collaboration with the team.

- Devising dishes based on stock from the farm shop, focussing on a zero waste approach.

- Delivering the best quality seasonal food

- Maintaining food hygiene and safety paperwork and practices, the kitchen and equipment.

- Help put maintain The Shoe profile to be a constant in the Hampshire food scene, producing consistent, delicious and inspiring products.
