We have an exciting opportunity for a Sous Chef to join our team at The Tradesmans Arms, a 14th Century grade 2 listed thatched pub and restaurant in the picturesque village of Stokenham, Devon. We are 5and 1 Rossette AA rated.
After a devastating fire in 2021 the pub has been completely rebuilt back to its former glory and to a very high standard. We have a brand new fully fitted kitchen with new appliances, separate pot wash area and cellar. A small but busy pub with bar area and restaurant seating from 40 - 60 covers, 3 Luxury B & B rooms (one of which is a suite) but also have a large outdoor decked and patio area which is packed in the summer months. We also have a great local following and benefit from all year-round custom.
The ideal candidate will play a crucial role in supporting the Head Chef in managing kitchen operations, ensuring the highest standards of food quality and safety. This position offers an opportunity for culinary professionals who are eager to contribute to an exceptional dining experience.
Responsibilities
Previous pub and restaurant experience would be essential in a Sous Chef role or Chef de Partie role.
You must have a passion for locally sourced, fresh, seasonal produce and enjoy working alongside the Head Chef and supporting the KP.
You will assist the head Chef with menu planning, costing/GP%, purchasing, stock control/rotation, health & safety procedures.
A keen learner with a good knowledge of produce and a range of Dishes.
Monitor inventory levels, assist with ordering supplies and maintain good relationships with suppliers.
Communicate and work well with the front of house team.
Capable of running the kitchen in the Head Chefs absence, dealing with kitchen-related issues promptly and effectively, maintaining smooth operations.
Skills
Strong knowledge of food safety practices and regulations.
Excellent culinary skills with a passion for food production and preparation.
Exceptional organisational skills with attention to detail in all aspects of kitchen management.
Strong communication skills, both verbal and written, to liaise with staff and management effectively.
A genuine passion for hospitality and delivering outstanding customer service through food excellence.
