As a Supervisor at Tonkotsu you will assist the General Managers and Assistant Managers in leading the day-to-day operation of the restaurant. Your role is crucial in ensuring that every customer receives the best possible experience through the delivery of Omotenashi hospitality, fostering high team morale, and achieving Tonkotsu standards, values and commercial success.
What I do
I take full accountability of the restaurant alongside the Assistant Manager and General Manager and during their absence.
I help to lead and motivate the team to ensure a smooth-running, profitable restaurant.
I monitor the quality and availability of products, as well as the service provided.
I assist in training and building a high-performing team, able to deliver Omotenashi hospitality to customers.
I deliver great Omotenashi experience through effective shift management and ensuring high standards of operations.
I use and make sure that the company communication channels are used in the right way at the right time, so that everyone is well informed and feels heard.
I support the management team in understanding the local area to recognise marketing opportunities and other competitors.
I support the management team in delivering sales and profit as per restaurant targets.

I support the management team in ensuring that the restaurant is safe, complies with all legal requirements, and is well maintained.
I play a crucial part in hitting agreed Key Performance Indicators (KPI's), which include:
o NPS and Social Media rating
o Health, Safety and Hygiene results
o Operational Checks
I complete all necessary documentation to company standard and make sure others do the same (e.g. Trail).
I will be cross-trained and be able to work in the kitchen, with knowledge of all food preparation and be able to run a section during service.
