For our newest Nottingham location, we're looking for an experienced and adaptable Full Time Sushi Chef to lead the launch and shape the future of this exciting new site. If you're ready to take the next step in your career and be part of a vibrant, expanding team, we'd love to hear from you.

Key responsibilities:



Prepare and present sushi, sashimi, and other Japanese dishes to company standards. Expertly fillet and portion fresh fish to ensure quality, consistency, and minimal waste. Maintain a deep understanding of sushi preparation, knife skills, and traditional techniques. Follow company recipes and portion guidelines to deliver a consistent dining experience. Ensure the highest standards of food hygiene, safety, and cleanliness within the kitchen. Assist in menu preparation and contribute ideas for specials or new dishes. Manage stock levels, ensuring ingredients are stored and rotated correctly for freshness. Support the Head Chef and kitchen team to maintain smooth daily operations. Train and guide junior chefs or kitchen assistants in sushi techniques and kitchen standards. Maintain an organised and efficient workstation, particularly during busy service periods.

Skills & Qualifications:



Proven experience as a Sushi Chef or in a Japanese restaurant environment. Exceptional knife skills and proficiency in filleting and preparing fish. Strong understanding of sushi rice preparation, seasoning balance, and presentation techniques. Attention to detail and commitment to maintaining high standards of quality and consistency. Good knowledge of food hygiene and safety standards (Level 2 or 3 Food Safety certification preferred). Ability to work calmly and efficiently under pressure. Team-oriented, with excellent communication and time management skills. Reliable, punctual, and passionate about Japanese cuisine and customer satisfaction. Flexibility to work evenings, weekends, and public holidays as required.
