Before opening our flagship, we are hosting a limited pop-up in Marylebone to showcase premium produce, signature seaweed, and a modern, design-led approach to sushi culture.
It is a temporary position 3 days a week for 1 month and a half starting November 17.
The Role
We are looking for a Junior Sushi Chef / Prep Chef to support our head chef during the pop-up. This is a guest-facing, behind-the-sushi-bar role where you will be making nigiris and handrolls and working in a premium environment, interacting directly with guests. The head chef will lead the menu and core production -- you will support and ensure smooth service execution.
Responsibilities
Fish preparation and portioning
Rice preparation and making handrolls and nigiri
Working behind the sushi bar serving guests directly
Supporting the head chef during service
Maintaining a clean and organised workstation
Following food safety and hygiene standards
Requirements
Previous sushi / Japanese prep experience
Confident knife skills and raw fish handling
Comfortable in a guest-facing environment
Clean, organised, fast and detail-oriented
Reliable, positive attitude, team-focused
Right to work in the UK
Nice to have
Experience in premium sushi or handroll bars
Experience in boutique or premium hospitality settings
Interest in modern Japanese cuisine and culture
