has an exciting new opportunity for a Technical Manager to join our team here at the winery.
With its roots in cider production, Lyme Bay has transformed over the years to become a leading producer of English still wines, consistently winning awards and in 2025 we became the only winery to win a trophy for both red and white wines in the same year. We are also the Uk largest producer of both country fruit wines and mead.
When it comes to our English wines, we like to do things a little differently. We are one of few wineries that work with growers all over the country to source the best fruit, rather than relying on a single vineyard. That way we have access to different varietals, grown on different soils, in different microclimates, allowing us to make
the best wines, from the best grapes, from the best vineyards.
You
will lead Quality & Technical processes here at the winery as well as ensuring legal and contractual technical compliance of the operations and products. You will promote a food safety and quality conscious culture, working closely with the operations team to drive improvement.
We have big plans for 2026 and beyond as we move into the RTD market, in addition to the new product launches we are exploring low alcohol and no alcohol options for 2026 /2027 release.
Key Responsibilities:
Ensure the site maintains the highest BRCGS standards.
Play a major role in the NPD team.
To arrange regular HACCP team meetings and ensure that the HACCP plan is reviewed and amended for new products, ingredients, and processes.
To ensure that all CCP are understood, verified, and supporting documentation is audited.
To ensure all CPs (check sheets, glass audit, calibration etc) are understood and supporting documentation is regularly audited.
Manage and review HACCP pre-requisites.
Manage an integrated Pest Control policy in conjunction with the company external provider.
Ensure that standard operating and cleaning procedures are correct and regularly reviewed.
Support document control systems by drafting required documents.
Ensure the management team are kept informed of scientific developments, industry codes of practise, new risk to authenticity of raw materials and all relevant legislation.
Ensure certificates of analysis are received for all relevant products and non-conformances reported.
Conduct regular audits of the manufacturing process to ensure that product quality and consistency is maintained.
Salary dependent on experience
Our winery works Monday to Friday with no weekend or night shifts.
