Job Role:
Responsible for assisting the catering manager to complete administrative and auditing tasks to ensure the smooth running of care home kitchens and the meal-time service.
Duties & Responsibilities:
Ensuring all care homes are well-equipped to provide high quality meals.
Helping to develop and implement seasonal menus, create recipes and allergen lists for the resident's food ordering platform.
Coordinating with Managers, Wellbeing Staff and Chefs to ensure smooth operation of food and service.
Liaising with the Well-being Services Manager with regards to event timings, themes, menu details, food delivery, timelines and budgets.
Coordinating and placing food orders from suppliers for all the homes on a weekly basis.
Liaising with suppliers to procure quality ingredients and supplies at competitive prices.
Building and maintaining positive relationships with suppliers.
Sourcing alternative options where food shortages occur.
Maintaining stock lists of equipment in kitchens and sourcing replacements where needed.
Ensuring kitchen staff are well-trained and deployed appropriately, resulting in a high standard of meal service.
Deputizing for the Catering Manager in their absence.
Assisting in the recruitment of Chefs and Chef Assistants.
Assisting the Home Managers in identifying Kitchen Assistants for further development and promotion.
Ensuring all mandatory training is up-to-date for Chefs & Chef Assistants.
Assisting the Home Managers to identify gaps in knowledge or training, and providing new trainings where relevant.
Scheduling and implementing chef's rotas and managing holiday requests ensuring adequate cover for all homes.
Ensuring chef cover where shortages occur.
Assisting Home Managers (where requested) to provide performance feedback and/or reviews for chefs.
Receiving feedback from chefs on the efficiency of preparing new dishes and adapting techniques or meals where needed.
Liaising with the Home Managers to understand the demographic and current needs of the Residents and making structural changes to the kitchen where necessary.
Ensuring all care home kitchens are operating in line with government guidelines and are inspection-ready.
Ensuring kitchens comply with food safety and health & safety regulations via regular audits.
Ensuring accurate records and documentation related to food handling and storage are carried out in accordance with Cedar Care Policies and Procedures.
Keeping up to date with any new and relevant legislation and standards, and ensuring that the information is passed on to and acted on by the care homes.
Ensuring all care home kitchens are continuously striving for a higher quality of the meals they provide.
Monitoring the quality of food and service provided by the kitchens and staff.
Ensuring that catering operations meet Cedar Care standards of quality and consistency.
Addressing any resident's complaints or issues in a timely and effective manner.
Receiving continuous feedback from the Chefs on the suitability of the meals provided.
Ensuring complete food quality inspections ensuring food quality is consistent with Cedar Care expectations.
