Helch Tap is launching two exciting new bar concepts within Winchester's brand-new food hall and late-night complex. We are now recruiting a skilled Nightclub Manager with strong cocktail expertise to lead operations at The Grow Room, a brand new cocktail-led nightclub opening in early 2026.

The Grow Room will feature an inventive cocktail menu, high-energy late-night service, and a 3 AM licence. We're looking for someone who thrives in nightlife environments and can bring passion, leadership, and creativity to this flagship new venue.

About the Role

This is a hands-on management position working Wednesday to Saturday (late nights), with Sunday-Tuesday as scheduled days off. You will work closely with the General Manager to deliver a safe, vibrant, and memorable nightlife experience while driving operational excellence in the nightclub.

Responsibilities

Supervise and coordinate all nightclub activities during evening hours, ensuring operational efficiency. Manage staff schedules, delegate tasks, and oversee team performance to deliver exceptional guest services. Ensure health and safety regulations are adhered to, maintaining a secure environment for guests and staff alike. Handle guest relations, resolving any issues promptly to uphold the venue's reputation for excellent hospitality. Oversee event planning, promotions, and entertainment schedules to maximise customer engagement. Monitor the bar and service areas to ensure compliance with licensing laws and company policies. Maintain accurate records of daily operations, including sales, inventory, and incident reports. Collaborate with security personnel to manage crowd control and enforce venue policies effectively.

Skills

Proven management experience within the hospitality or nightlife industry. Strong organisational skills with the ability to multitask in a fast-paced environment. Excellent communication and interpersonal skills to interact confidently with guests, staff, and suppliers. Sound knowledge of health and safety regulations relevant to nightlife venues. Ability to lead a team with motivation and professionalism while fostering a positive working environment. Guest service orientation with a focus on delivering memorable experiences. Oversee nightly operations of The Grow Room from opening to close (up to 3AM).
Cocktail & Bar Leadership

Lead the creation, development, and refinement of the cocktail menu. Train and develop bar staff in mixology, speed of service, and cocktail presentation. Ensure consistent quality of cocktails during high-volume periods.
Team Leadership

Manage, motivate, and support the nightclub team throughout late-night operations. Coordinate shift plans, staff deployment, and key operational roles alongside the General Manager. Lead from the front, being highly visible on the floor and behind the bar.
Safety & Security Collaboration

Work closely with the security team to maintain a safe and controlled environment. Support incident management, guest welfare, and conflict resolution where required. Ensure compliance with licensing laws, health & safety, and venue policies.
Customer Experience & Atmosphere

Create a welcoming, energetic, and enjoyable environment for all guests. Engage with customers to enhance their experience and build repeat business.
Business Performance

Monitor nightly takings and drive revenue through cocktails, promotions, and service flow. Assist in cost control, wastage management, and staff efficiency. Provide feedback and ideas to ownership and the General Manager to help shape the venue's success. Ensure smooth, efficient service during peak late-night hours. Maintain high standards of cleanliness, safety, and venue presentation. Oversee stock levels, ordering, and cellar/bar prep for cocktail and spirits service.
