We are currently seeking a Breakfast Sous Chef to take charge of morning kitchen operations and contribute to the next chapter of culinary excellence at The Marcliffe.

YOUR ROLE
As Breakfast Sous Chef, you will be responsible for the preparation, cooking, and presentation of our renowned breakfast service. You'll ensure every dish meets our exacting five-star standards and start each guest's day with something truly memorable.
You'll also support the Head Chef and Executive Chef in wider kitchen operations, team development, and the continued evolution of our menus and service.
YOUR RESPONSIBILITIES
Lead breakfast service, ensuring timely, high-quality, and beautifully presented dishes
Prepare and deliver varied, nutritious staff meals for lunch and dinner
Collaborate on seasonal menu development with creativity and cost awareness
Ensure stock rotation, minimise waste, and monitor food quality
Support ordering, stock control, and kitchen organisation in line with cost and sustainability goals
Delegate tasks to junior chefs and apprentices, providing hands-on guidance and support
Uphold health & safety, hygiene, and food safety standards at all times
Maintain all kitchen equipment and ensure cleanliness and functionality
Deputise for the Head Chef in their absence, ensuring smooth kitchen operations and team motivation
Contribute to hotel events and wider culinary offerings as part of a collaborative team
ABOUT YOU
Proven experience as a Breakfast Chef or Chef de Partie in a high-end, fast-paced kitchen
Excellent culinary and plating skills, with a strong eye for detail
Passion for 5-star food and guest experiences
Strong leadership, organisation, and time-management skills
Ability to remain calm and lead by example under pressure
Positive, proactive attitude and a hands-on, team-first mindset
Relevant culinary qualifications and valid food hygiene certification
Physical stamina for early starts and long shifts
SALARY & BENEFITS
36,000 - 38,000 per annum (depending on experience)
