Dear Butcher,

We are a brand new butchery & rotisserie opening in the heart of beautiful Hampstead in June 2025. Oliver Harley who ran Provenance, Chelsea for 10 years is looking for an experienced butcher who can help lead the meat counter and this incredible concept. Harley's will be pushing the boundaries within the world of retail butchery and with direct links to Txuleta Wholesale and Ibai restaurant it's going to be a very exciting journey.

Duties

Prepare and cut various types of meat, including beef, pork, lamb, and poultry, according to specifications. Ensure all meat products are handled and stored in compliance with food safety regulations. Maintain cleanliness and organisation of the butcher area, including tools and equipment. Monitor inventory levels of meat products and assist in ordering supplies as needed. Provide excellent customer service by answering questions about meat cuts and preparation methods. Stay updated on culinary trends related to meat preparation and presentation.

Requirements

Proven experience as a butcher or in a similar role within the kitchen or food production environment. Strong knowledge of food safety practices and regulations. Excellent knife skills and familiarity with various cutting techniques. Ability to work efficiently in a fast-paced restaurant setting. Good communication skills and the ability to work well within a team. A passion for culinary arts and commitment to high-quality food preparation.
