The Role
We are seeking an experienced catering butcher with strong knowledge of restaurant and hospitality requirements. This role is ideal for someone who understands portion control, consistency, yield, and presentation, and who can work efficiently in a fast-paced wholesale environment.
Key Responsibilities
Cutting, trimming, and preparing meats to restaurant and catering specifications
Producing consistent portions for chefs and hospitality clients
Preparing fresh meat orders accurately and efficiently
Maintaining high standards of hygiene, food safety, and cleanliness
Following HACCP, temperature control, and company procedures
Minimising waste and maximising yield
Working to tight deadlines to meet delivery schedules
Supporting the team with general butchery and preparation tasks
Requirements
Proven experience as a catering butcher (essential)
Strong understanding of restaurant and hospitality standards
Experience with beef, lamb, poultry, and portion-controlled cuts
Ability to work quickly and accurately under pressure
Excellent knife skills and attention to detail
Knowledge of food safety, hygiene, and temperature control
Reliable, punctual, and a strong team player
Desirable (but not essential)
Experience working in a wholesale or production butchery
Knowledge of chef-led specifications and custom cuts
Level 2 Food Safety & Hygiene certification
