The Chef de Partie (CDP) is responsible for running a specific section of the kitchen efficiently and to the highest standard. Working under the supervision of the Chef Manager, the CDP ensures food is prepared, cooked, and presented consistently, meeting both quality and hygiene standards. This role requires a blend of culinary skill, time management, and teamwork to contribute to a smooth kitchen operation.
Key Responsibilities
Section Management
- Take ownership of a designated kitchen section, ensuring it operates efficiently during service.
Food Preparation & Cooking
- Prepare, cook, and present dishes to agreed specifications and portion sizes.
Quality Control
- Maintain high standards for taste, presentation, and consistency.
Hygiene & Safety
- Follow food safety and kitchen hygiene regulations (HACCP), maintaining cleanliness and order in your section.
Stock Control
- Monitor and manage stock levels, assist in ordering supplies, and minimise waste.
Team Collaboration
- Work closely with other team members to ensure smooth service, supporting other sections as needed.
Training & Development
- Help train junior chefs and kitchen assistants, sharing skills and knowledge.
Problem-Solving
- Address issues quickly and effectively during service to keep operations flowing.
Menu Development
- Contribute ideas for new dishes and seasonal specials.
What we're Looking For
Experience
- Previous experience in a professional kitchen, ideally as a Commis Chef or Demi Chef de Partie before stepping up.
Skills
- Strong cooking skills, knowledge of kitchen sections, and ability to work under pressure.
Organisation
- Good time management and ability to prioritise tasks in a fast-paced environment.
Communication
- Clear and respectful communication with kitchen and front-of-house teams.
