Who we are.



New Lanark Mill Hotel is unlike any other in Scotland. Originally an 18thcentury cotton mill, we offer 38 spacious and stylish bedrooms that combine traditional charm with modern convenience. We're rated four stars by VisitScotland, and have a Certificate of Excellence from TripAdvisor. We are owned and operated by New Lanark Trust an independent Scottish Charity which is responsible for the ongoing conservation and promotion of New Lanark World Heritage Site.

Who we are looking for.



Working as part of the kitchen team you will ensure food is prepared and cooked to a high standard on a daily basis. You will have an eye for detail with an organised approach to your day ahead and show enthusiasm for cooking. You'll be able to stay calm under pressure and thrive from being part of a busy kitchen environment. You'll be passionate about food and committed to great service delivery. You'll be allocated your own workload on a daily basis and be willing to help other team members when they need support. You'll need to have a flexible approach.

What you'll need.



Experience in this role or similar Enthusiasm and flexibility Display a professional and courteous attitude Ability to work on your own but also an effective team player Good time management and ability to work under pressure An excellent eye for detail Good communication skills

Key responsibilities.



Set up, prepare ingredients and cook food for each service as directed by the Head Chef or Sous Chef, ensuring recipes are followed consistently to keep the quality and cost constant Take responsibility for the ordering of stock as required in the absence of the Head Chef or Sous Chef Ensure that necessary paperwork, administration, controls and records are undertaken and maintained as directed by the Head Chef to include Health & Safety, Food Safety and any other as requested. Ensure that food preparation areas are kept clean and tidy at all times. Ensure that requisitions for food are received by the Head Chef and that freezers and refrigerators are replenished as appropriate. Controls wastage and records / reports all wastage. Ensures stock rotation is followed and all store rooms, fridges and freezers are in order.
