Role Overview:
We are looking for a passionate and reliable Chef de Partie to join our kitchen brigade. You will take responsibility for a section of the kitchen and support the Head and Sous Chefs in delivering high-quality food for our guests. You will play a key role in maintaining hygiene standards, training junior staff, and ensuring smooth kitchen operations.
Key Responsibilities:
Run and manage a designated section (e.g. grill, larder, breakfast) to high standards.
Prepare and present dishes consistently in line with portion sizes and brand standards.
Support in planning daily production and mis-en-place.
Work closely with the Sous Chef and Head Chef to ensure service runs efficiently.
Maintain cleanliness and organisation in your section, adhering to food hygiene standards (HACCP).
Monitor stock rotation and reduce food waste in line with company sustainability targets.
Train and supervise Commis Chefs and Kitchen Porters where required.
Assist with deliveries, storage and kitchen opening/closing procedures.
Ensure compliance with all health & safety and food safety legislation.
Requirements
Previous experience in a Chef de Partie role within a hotel, high-volume restaurant or similar environment.
A relevant food or hospitality qualification is desirable.
Good knowledge of food hygiene and kitchen safety (Level 2 Food Hygiene minimum).
Strong communication and organisational skills.
A team player with a positive, "hands-on" attitude.
Ability to work under pressure in a busy kitchen.
Flexibility to work across shifts including early mornings, weekends and bank holidays.
Working Conditions
Standing for long periods and handling hot equipment and sharp tools.
The role involves early starts, late finishes, weekends, and bank holidays, based on a rota system to meet the needs of breakfast, lunch, dinner, and occasional events.
You will be expected to work as part of a small but dynamic team, sometimes under pressure during peak service times.
Uniform and meals on duty are provided.
The kitchen follows strict hygiene and health & safety standards, and adherence is mandatory at all times.
Flexibility to support other kitchen sections when needed is required.
