Attendant Coffee Roasters is recruiting an Assistant Manager capable of raising standards, maintaining discipline, and supporting consistent operational performance across busy London cafes. Recent hiring cycles have clarified the level of operational strength and leadership required for this role. We are setting a clear benchmark to ensure we bring in individuals who can meet the demands of a high-performance cafe environment.

Attendant is an established London coffee business built on product quality, operational clarity, and neighbourhood relevance. Our cafes operate in high-volume environments where customer service, consistency, and discipline matter. The Assistant Manager role sits at the centre of that system.

Core expectations

Maintain daily operational standards across service, product quality, cleanliness, and customer experience Lead, train, and develop teams to deliver consistent, professional performance Model high personal standards on bar, on the floor, and during peak trade Manage ordering, stock integrity, cash control, rota adherence, and compliance tasks without prompting Ensure Health & Safety and Food Safety processes are followed precisely Support the General Manager in hitting weekly revenue, labour, and cost targets Act as a stabilising presence in the business: calm under pressure, solutions-driven, and reliable
Requirements

Minimum two years' experience in an equivalent leadership role within a high-volume cafe, coffee shop, or fast-casual environment Clear understanding of specialty coffee, food-led cafe operations, and service flow management Demonstrated ability to manage people, set standards, hold staff accountable, and maintain team culture Strong communication skills, with the ability to coach, correct, and develop staff High personal work rate; thrives in hands-on leadership Ability to manage multiple priorities while maintaining accuracy and pace
