ABOUT THE ROLE

Our site features an award-winning deli and bakery, alongside a high-performing chippy, hot food counter, coffee treats section, acai bar, prep kitchen, and ready-to-eat (RTE) production operation.

We are now recruiting a Food to Go Operations Manager to lead, inspire, and develop our food to go teams while maintaining the high standards our business is known for.

This is a full-time position of 47.5 hours per week, worked predominantly during daytime shifts.

Candidates must have:

Have at least 3 years of managerial experience within a food industry setting

Strong leadership and communication skills. HACCP training Knowledge of Food Safety practices and procedures- minimum Level 2 qualification in Food Safety. Knowledge of allergens, and Natasha's Law. Ability to manage multiple departments simultaneously. Have good organisational skills, be able to work well under pressure, and show initiative whilst multi-tasking. Have a full understanding of costing and margins. Strong understanding of stock management and waste control. Hold adequate ICT skills. Passion for quality, service, and team culture.

KEY RESPONSIBILITIES

1.

Operational Leadership Across Award-Winning Counters



Oversee daily performance across the award-winning deli and bakery, chippy, hot food counter, coffee treats section, RTE kitchen, prep kitchen, and acai bar. Responsibilities include breakfast and lunch service preparation, bakery cooking and finishing, RTE assembly and labelling, hot food standards, display quality, and staff coordination during busy service. Review the commercial success of the Food to Go department, by analysing performance indicators such as sales and waste, and lead the team to achieve targets and budgets. Consistently improve and drive sales across all departments. Source, create and promote new products to keep the offering fresh, exciting and competitive. Monitor and improve margins by negotiating the best possible prices with all suppliers. Ensure all retail selling prices are accurate and updated regularly. Ensure staff adhere to correct portion controls to protect and maintain margin.

People Leadership and Team Culture



Lead and motivate a large team across multiple counters. Promote a culture of respect, fairness, and teamwork in line with family business values. Deliver daily briefings, set clear expectations, coach staff, and manage performance professionally. Create and manage staff rotas to ensure all departments are appropriately covered Organise cover for staff absences and respond quickly to unexpected staffing gaps. Manage staff holiday requests and ensure adequate operational coverage at all times. Handle staff disciplinary matters professionally and in line with company procedures when required.
3.

Recruitment, Training and Development



Recruit, induct and train new staff. Deliver structured safety, hygiene, allergen and operational training. Support ongoing development, cross-training, and performance reviews.
4.

Food Safety, Allergen Control and Natasha's Law



Maintain full compliance with HACCP and food hygiene legislation. Enforce strict allergen controls and prevent cross-contamination. Ensure PPDS labels are accurate and legally compliant. Maintain 5-star hygiene across all food areas.
5.

Stock, Ordering and Waste Management



Work with the store orders manager on forecasting and ordering. Maintain accurate stock rotation and delivery checks. Control waste through careful planning and GP protection. Participate in monthly and quarterly stocktakes.
6.

Hygiene, COSHH and Deep Cleaning



Oversee daily, weekly, monthly and quarterly cleaning schedules. Ensure COSHH compliance and proper chemical use. Maintain pre-inspection readiness for EHO visits.
7.

Customer Experience



Maintain friendly, fast, and consistent customer service aligned with family business values. Ensure clean, attractive counters. Handle customer queries and complaints professionally.
8.

Continuous Improvement and Problem Solving



Identify and implement operational improvements. Maintain award-winning quality standards. Respond calmly and professionally to staff shortages, equipment issues or service pressures.
