Deputy Head Chef - Brookhouse Mill, Denbigh, LL16 4RD (opening early 2026)
Full Time - based on 48 hours per week
Salary - OTE 46,250 per annum
Brookhouse Mill is a converted water mill, now a pub full of character and charm on the banks of the River Ystrad, on the outskirts of the market town of Denbigh in the charming Vale of Clwyd. The pub was bought by Stange & Co earlier this year and we can't wait to get it back open and at the centre of the town's community once again. Our extensive refurbishment is now well underway, we've got our head chef and GM on board, so we're now seeking a friendly, enthusiastic, hard-working DEPUTY HEAD CHEF to join us and work alongside the HEAD CHEF, leading the team and driving the pub forward. As Deputy Head Chef:
You will be involved in working with the head chef to design and produce a consistent, high quality, freshly prepared daily menu. You will also be responsible to head up and manage the whole kitchen brigade in the head chefs absence.
You will be expected to build relationships with local suppliers and assist in sourcing and negotiating for, the best produce around.
An essential and vital element of the job is kitchen management; working with the senior team to hit and maintain margins & wage percentages. It will be necessary in this position to have proven experience in leading a team, and be a great communicator to management and senior chefs.
You will help lead, train and bring on a team of chefs, creating an enjoyable & professional environment for both the kitchen and front of house team.
You need to be a team player and have a passion for working in the industry.
We are looking for a deputy head chef with bags of enthusiasm and a healthy helping of flair and creativity. Fine dining, we are not, but quality well executed fresh food is very much what we're about. Our food is fresh, hearty and interesting, with a menu that reflects the seasons & our location, which helps ensures sustainability and prevents our customers and kitchen team getting bored. This constantly evolving menu is a combination of well-loved classics and more interesting dishes taking influence from all over the world. You'll work alongside the head chef and general manager to create this menu and will be given the opportunity to develop some of your own dishes and indulge your passions. A genuine love of food, attention to detail, and experience of a busy high-volume kitchen at sous chef level is vital.
