Main duties and responsibilities
To lead and inspire the managers and staff of the FB operational departments across both The Berkeley and The Emory, achieving and ideally exceeding both hotel objectives and service standards that centre on guest relations, employee relations, costs efficiencies and sales revenue. The Director of Food and Beverage will be the key liaison between the hotel and external stakeholders in the FB operation concerning the above departments.
To co-ordinate and oversee the day-to-day operations/activities of the specified food beverage departments across both hotels in accordance with company food beverage quality standards and the hotel's policies, procedures and objectives.
To assist each department operationally from week to week alerting the Managing Director to areas of need or shortage.
To lead in the generation of ideas to impact positively on revenue and to drive the implementation of these ideas.
To establish and administer short and long-term objectives for the specified food beverage departments and to ensure quality standards are maintained.
To share knowledge and encourage management and staff to develop within the departments.
To co-ordinate the activities of your reporting food beverage departments with the other operating departments of the hotel in order to provide the best possible service to the guests in across food and beverage.
To consistently aim to achieve the food and beverage division objectives as set out by the Hotel Manager.
To interact with individuals outside the hotel including, but not limited to, suppliers, government officials, competitors and other members of the local community.
To be aware of and comply with legal requirements including licensing, health safety, employment and other statutory requirements.
To participate in the generation of ideas to impact positively on level of revenue and to assist in the implementation of these ideas. The aim is to keep The Connaught innovative and ahead of trends in what we offer guests.
Review work procedures and operational problems in order to determine ways to improve service, performance, and/or safety.
To be fully converse with hotel, LQA and Forbes standards.

General Department
To ensure the smooth running of all outlets and ensure that high standards and quality of service are maintained within these areas.
To ensure that revenue and expenses are in line with budgeted guidelines and, in conjunction with the Executive Chef, plan menus for all outlets.
Maintain an active presence in all outlets whilst in operation. From time to time oversee functions ensuring all client requirements are met.
In conjunction with the Executive Chef and Head of Wine, prepare wine lists and ensure good menu planning, taking into account the seasons of the year and the fresh seasonal produce available
Delegate, lead, and supervise outlet managers to ensure that work is completed both efficiently and punctually and to the company standard.
Verify all function sheets on a weekly basis and ensure that daily, weekly and monthly reports are issued accordingly.
