What you'll be doing




As Executive Head Chef, you'll oversee the seamless operation of our kitchens, ensuring that each dish--whether it's for Breakfast, Room Service, Meetings & Events or our F&B Outlets, delivers on quality and presentation. You'll lead with adaptability and drive, setting high standards across every service. Your responsibilities will include recruiting, training, and developing a proud and passionate team, inspiring them to bring out their full potential. Additionally, you'll foster an environment where team members feel valued and engaged, helping them to thrive within a culture that's both inclusive and focused on real growth.


With a brigade of 50 chefs, you will be supported by two Head Chef's - one dedicated entirely to our Gordon Ramsay Hell's Kitchen, and the other overseeing our new tapas restuarant Lirica, along with all other F&B offerings on property.


It's essential you've held a similar role previously and can demonstrate seasoned cooking skills with the understanding and ability to support a variety of food offerings and the teams that deliver them.

What you'll bring



Proven experience multi-outlet kitchen, showcasing bold culinary skills and innovative practices Relevant Certificate III in Cookery qualifications and experience in a similar role A valid Food Safety Certificate, demonstrating commitment to real food safety standards Knowledge of various cuisines, embracing diversity and creativity in your cooking practices Strong understanding of HACCP and OH&S regulations to ensure a safe and compliant kitchen environment Acknowledgment of the importance of brigade work, fostering a supportive and inclusive team atmosphere Flexibility to work a range of shifts, including weekends, to meet the demands of our busy operations Ability to thrive under pressure while maintaining high standards in a dynamic team environment Skills in coaching and motivating less experienced kitchen team members, helping them reach their full potential Seasoned operator in supplier and stores management
