As we continue to grow, we are expanding the finance team and we are seeking an F&B Controller to oversee the food and beverage cost control function across our venues, ensuring optimal cost management, inventory accuracy, and operational efficiency. This is a pivotal role that will support the leadership and operations teams in driving profitability, improving margins, and supporting the group's continued expansion.
The Role
The F&B Controller will be responsible for overseeing all aspects of food and beverage cost control across Thesleff Group's portfolio. Working closely with the Finance, Culinary, and Operations teams, this role will ensure accurate inventory management, effective cost tracking, and data-driven analysis to support financial performance and operational decision-making.

Key Responsibilities
Cost Control & Inventory Management
Develop and implement robust cost control procedures for all F&B operations across the group.
Monitor daily, weekly, and monthly food and beverage costs, ensuring alignment with budgets and targets.
Manage and reconcile inventory systems, conducting regular stocktakes and variance analysis.
Analyse wastage, yield, portion control, and supplier pricing to drive efficiencies and minimise losses.
Reporting & Analysis
Produce accurate and timely F&B cost reports and dashboards for senior management.
Conduct menu engineering and profitability analysis in collaboration with chefs and GMs.
Identify trends and variances in food and beverage performance and make strategic recommendations.
Support forecasting and budgeting processes by providing data-driven insights.
Operational Collaboration & Support
Work closely with the Culinary and Operations teams to ensure best practices in purchasing, storage, and production.
Train and support venue teams on cost awareness, stock control, and systems usage.
Ensure compliance with internal controls, procurement procedures, and health & safety standards.
Collaborate with the Finance team to ensure integration of F&B data into broader financial reporting.
Systems & Process Improvement
Oversee and improve F&B systems and software to ensure efficiency and accuracy.
Drive automation and reporting improvements to streamline operational processes.
Support system upgrades and migrations aligned with group growth.
Key Requirements & Skills
Experience & Knowledge
Proven experience in an F&B Controller or similar role within the hospitality industry.
Strong understanding of inventory control, procurement processes, and cost analysis.
Experience in multi-site operations is highly desirable.
Proficiency in inventory and POS systems (e.g. Fourth, or similar) and Microsoft Excel.
Solid understanding of hospitality KPIs, P&L analysis, and menu costing.
