General Manager - New Restaurant Opening
Location: London
Salary: 65,000-70,000 + bonus
A new 80-cover restaurant is launching in the city with a summer opening planned and projected sales of c.100k per week. The concept is premium but approachable, with a strong bar and entertainment element, while remaining firmly focused on quality food and sharp service. This is a high-profile opening with clear commercial ambition and hands-on ownership.
The role:

  • Reporting directly to the founder and working closely with the Head Chef to deliver a standout City destination
  • Full operational ownership of the business, balancing day-to-day delivery with longer-term strategy
  • Leading from the floor and setting standards around service, pace and guest experience
  • Recruiting, training and developing a strong management and front-of-house team
  • Ownership of commercial performance, labour, margins and cost control
  • Confident handling of HR matters with a calm, structured approach
The person:
  • A proven General Manager from a premium restaurant background
  • Comfortable with the realities of a new opening, from pre-launch through the first 12 months
  • Strong on recruitment and building teams from the ground up
  • Commercially sharp with a solid understanding of P&L and forecasting
  • Experience working within an independent business and the flexibility that requires
  • Highly detail-focused with strong floor presence
