You should:
Have management experience within hospitality or bistro-style dining
Lead by example -- calm, professional, and hands-on
Be confident managing rotas, costs, and day-to-day operations
Have strong organisational and people skills, with a focus on developing and motivating the team
Be enthusiastic about helping an independent business expand and refine its offering
