Role Overview

Canopy by Hilton London City is seeking a passionate and skilled

Head Baker

to join our dynamic culinary team. In this hands-on role, you will work independently through the night to prepare high-quality, artisanal baked goods for our breakfast service and other hotel outlets.



This position is ideal for a detail-oriented, self-motivated baker who thrives in a solo environment and takes pride in producing consistently exceptional products that reflect the Canopy brand's unique, locally inspired culinary identity.

Key Responsibilities

Independently produce a range of high-quality artisan baked goods for breakfast service and hotel outlets, including but not limited to: + Croissants, pain au chocolate, pain aux raisins + Selection of fresh breads (e.g., sourdough, baguettes, rolls)
Manage the entire night baking operation autonomously, ensuring timely preparation and delivery of items each morning. Maintain strict food safety, hygiene, and cleanliness standards throughout production. Ensure consistency and quality in both taste and presentation across all products. Monitor stock levels and communicate with the culinary team regarding ingredient needs and inventory. Maintain and clean all baking equipment and workspaces at the end of each shift. Collaborate with the Executive Chef on product innovation, seasonal offerings, and menu development.

Required Qualifications

Minimum

10 years

of professional baking experience, with expertise in laminated doughs, Viennoiserie, and artisan breads. Demonstrated ability to work independently with minimal supervision, especially during overnight shifts. Strong understanding of fermentation, proofing, and baking techniques. Knowledge of food safety and hygiene standards (e.g., HACCP).

Preferred Qualifications

Culinary or baking certification from a recognized institution. Experience in a hotel or high-end bakery environment. Familiarity with specialty diets and alternative baking (e.g., gluten-free, vegan).

Highly self-motivated and reliable, with excellent time management skills. Attention to detail and consistency under pressure. Ability to take initiative and problem-solve in a solo work environment. Passion for baking and continuous improvement. commitment to the Canopy culture and values.

Technical Skills

Proficient in the use of commercial baking equipment (e.g., deck ovens, mixers, proofers). Basic understanding of stock and inventory systems. Ability to work safely with sharp tools, hot surfaces, and heavy equipment.
