to lead our bakery production team for our London flagship store (High Holborn).
As Head Baker, you will be responsible for overseeing all aspects of bakery production, ensuring that every product meets our high standards for taste, quality, and consistency. You will play a crucial role in product development, staff training, and daily operations within a vibrant and growing bakery concept inspired by authentic Italian traditions.
Activities & Responsibilities
RECIPE DEVELOPMENT & QUALITY CONTROL
oFinalize and standardize recipes in collaboration with the founders.
oEnsure product consistency, freshness, and adherence to Nonna Bakery's signature style.
oDevelop and maintain SOPs (standard operating procedures) for all products.
DAILY PRODUCTION MANAGEMENT
oPlan and supervise daily baking operations.
oEnsure all baked goods (croissants, focaccia, cannoli, etc.) are produced on time and to high standards.
oMaintain cleanliness and organization in the baking area.
TEAM SUPERVISION & TRAINING
oHire, train, and lead the baking team.
oMotivate team members, provide ongoing training, and conduct regular evaluations.
oPromote a positive and professional working environment.
oRota coordination
INVENTORY & SUPPLY MANAGEMENT
oManage stock of ingredients and baking supplies.
oPlace orders and coordinate with suppliers to ensure availability of high-quality raw materials.
HEALTH & SAFETY PROCEDURES
oEnsure full compliance with all food hygiene, health, and safety regulations at all times, including HACCP and local authority standards.
oConduct daily and weekly checks to maintain cleanliness, sanitation, and proper food storage throughout the bakery and production areas.
oLead by example in enforcing the correct use of PPE, safe handling of equipment, and adherence to all operational safety procedures.
oIdentify potential hazards, report maintenance issues promptly, and take proactive measures to prevent accidents or contamination.
oTrain and supervise bakery staff on safe working practices, allergen control, and emergency procedures.
oKeep accurate records of cleaning schedules, temperature logs, and incident reports.
QUALIFICATIONS
Previous experience in Italian bread and pastries
Knowledge of kitchen safety procedures and food hygiene standards
Strong organisational skills and attention to detail
Ability to work efficiently under pressure while maintaining high standards of quality
A genuine passion for food and a willingness to develop culinary skills
