Are you passionate about coffee?



The Head Barista ensures every drink served from our Menu is consistent, high-quality and delivered efficiently, while leading a motivated barista bar team with clear standards and systems. The Head Barista sets the standard for coffee excellence, operational flow and bar efficiency across both units.

You will need proven effective 'people skills' with a team first approach. Minimum of 12 months experience at supervisory level is essential. Able to demonstrate ability to remain calm and positive under pressure is fundamental success in the role.

This role is 36 hours per week average over a 2 week rota working a 6/4 pattern. Alternate weekend working with one day off a week.



KEY RESPONSIBILITIES



1.

Coffee Quality & Technical Standards



Ensure every drink served meets the departments standards for taste, presentation and consistency. Ensure espresso extraction, calibration and grinder settings are correct throughout the day. Maintain strong working knowledge of: Espresso calibration Milk steaming and texturing of all milk types. Cleaning and maintenance of coffee machinery Seasonal drinks and specials. Develop recipes, presentation standards and training materials Ensure baristas follow the correct SOPs for hot, iced and speciality drinks. Maintain consistent recipes, ratios and presentation for all drinks. Conduct daily grinder calibration checks. Maintain cleanliness, hygiene and upkeep of: Espresso machines, Grinders, Blenders, Ice machines, Syrup stations, Utensils and bar tools. Report machine faults and maintenance needs promptly.

2. Leadership & Team Management



Lead the barista team day-to-day as the senior barista on duty. Model the pace, standards and behaviour expected during service. Deliver structured training for: New baristas Intermediate baristas Upskilling refresher sessions Develop baristas through the SCA-style internal training journey. Provide coaching, feedback and guidance to improve performance. Promote a positive, supportive, high-energy coffee culture. Address performance issues promptly and fairly. Act as the second lead on weekend two supporting the Head of Hospitality & Catering in the daily operation of the Restaurant & Cafe units. Understand and be able to step into other restaurant roles and have an understanding of the service systems used to help support the team and FOH manager in policing the standards.

3. Operational Management of Espresso Bars



Oversee daily setup, workflow, organisation and close- down of all coffee bar areas. Maintain a clean, organised, efficient working environment. Run efficient 2-person, 3-person and 4-person crew systems. Manage workflow to hit drink time targets and avoid queue delays. Ensure all counters, cake displays and fridges remain clean and well stocked. Ensure the coffee bar is always service-ready with correct equipment, tools and ingredients. Resolve operational challenges quickly and effectively.

4. Stock, Ordering & Waste Control



Monitor and manage stock levels: Coffee beans, Milk, Syrups Cleaning materials, Takeaway cups, Frappe/smoothie ingredients, Alcoholic drinks -Wine, cocktails, beers, ciders, liqueurs and spirits. Use FIFO rotation and correct storage procedures. Communicate low stock levels to FOH Manager or order directly where authorised. Track and report wastage, faults and inefficiencies. Maintain cost awareness in portioning and workflow.

5. Hygiene, Safety & Legal Compliance



Ensure all food hygiene, allergen, and H&S standards are followed. Maintain cleanliness and sanitation throughout the shift. Complete daily & weekly barista operational checklists. Support the business in maintaining a 5-star hygiene rating.
