Head Brewer
We have a unique opportunity for a talented Brewer to join our Brewery and Distillery in the heart of Inverness. The ideal candidate for this position has Experience in the commercial craft beer industry and can help us develop the production further, including the development of new brews and procedures. The Brewer should have a clean and tidy appearance, excellent communication skills, and be capable of multitasking efficiently. Key Responsibilities:
Process:
Wort production, monitoring fermentations and performing of cellaring tasks: Beer transfers, yeast handling, dry hopping, We spund the beers, Co2 checks and racking, milling, kegging, canning, diatomaceous earth filtration.
Negotiations of raw material contracts and ordering of raw materials and other supplies to fulfil the schedule.
Optimise output and advise on new equipment specifications.
Yeast management.
Production scheduling to ensure delivery of product on time in line with agreed cost
Bulk beer storage and transfer.
Filling and packaging in kegs, cans & serving tanks
Raw Material stock control and inventory management.
Troubleshooting issues with equipment.
Quality:
High standard of QC and record keeping ensuring beers exceed expectations.
Responsible for immaculate brewery hygiene, including CIP and sanitising of product lines and equipment. Adequate cleanliness of surroundings.
Complete all appropriate production documentation from grain to glass and follow standard operating procedures.
Maintain accurate records in accordance with company policy.
Ensuring adherence to our statutory obligations, HACCP plan, quality management system, and Health & Safety procedures.
Expansion:
Undertake R&D to achieve positive change/improvements for brewing processes.
New product development:
Develop and cost up new recipes and seasonal brews, ensuring they are accessible and appeal directly to our target market.
Sales Support:
Represent the company at industry events/beer tastings when required.
Visit customers for training needs.
Work with Directors to create and manage plans to increase annual output in line with agreed sales forecasts.
Tours:
Be able to take specialist tours around the facility regularly and be involved in conversations and presentations with customers on a daily basis.
Requirements:
Experience in commercial brewing.
Ability to lead on recipe design and product development.
CIBD Brewing and distilling MSC (most desirable)
Ability to move and lift kegs comfortably.
Knowledge of process and maintenance.
Hold a relevant technical degree in STEM or science or Brewing.
Forklift license and driving license is a must,
Desirables: IOSH, NEBOSH & COSHH
