The Altonwood Group is seeking to recruit a Head Chef at one their busy proprietary golf clubs which features a strong function/corporate hospitality business. The Head Chef will control and manage the day to day running of the Kitchens to ensure that the preparation and presentation of food is of a consistently high standard.
Responsibilities and Duties
Run the kitchen and service the business as required.
Manage, lead and motivate the Kitchen team.
Ensure the smooth running and operation of the Kitchens on a day to day basis.
Comply with and implement all Statutory Health & Safety and Food Hygiene standards and ensure that staff are fully aware of these.
Manage training and development of the Kitchen team to achieve a high quality of product and presentation.
Manage staff rotas to service the business efficiently and ensure that labour costs are kept within budgeted targets.
Ensure foodstuffs are used correctly so that wastage is kept to a minimum and staff are trained to effect good portion control.
Ensure relevant financial targets are met as agreed with the General Manager.
Ensure all invoices are processed and accounted while keeping advice notes, delivery notes and invoices for the stock taker and the accounts department.
Ordering of stock to ensure that the kitchen is adequately stocked with all necessary goods of the right quality and price.
Ensure stock rotation is followed and all store rooms, fridges and freezers are in order, temperature records are kept and food labelling is up to date.
Ensure stock is secure and that wastage is kept to a minimum.
Qualifications and Skills
The ideal candidate will have at least 2 year's experience as a Senior Sous Chef in a busy commercial kitchen and the Level 3 Food Hygiene & Safety in Catering qualification.
