Small French brasserie with approximately 50 covers serving a few French classics as well as small sharing plates.
Salary : 38K plus share of service charge
Duties:
- Oversee all aspects of the kitchen and food production in a restaurant setting
- Create and develop menus that align with the culinary vision and concept of the establishment
- Manage and lead a small team of kitchen staff, including hiring, training, and scheduling
- Ensure efficient and effective food preparation and cooking techniques are followed
- Monitor inventory levels and order supplies as needed
- Maintain high standards of food quality, presentation, and taste
- Collaborate with management to develop and implement new dishes or specials
- Ensure compliance with food safety and sanitation regulations
- Manage kitchen operations within budgetary constraints
Experience:
- Proven experience as a Head Chef or similar role in a restaurant
- Knowledge of French cuisine an advantage
- Excellent knowledge of food preparation techniques, ingredients, and flavours
- Ability to manage a team and delegate tasks effectively
- Strong leadership skills with the ability to motivate and inspire others
- Knowledge of kitchen operations, including inventory management and cost control
- Familiarity with food safety regulations and best practices
