Due to ongoing growth, we are seeking an experienced and passionate Head Chef to lead our kitchen team. The ideal candidate will possess a strong culinary background, exceptional leadership skills, and a commitment to maintaining the highest standards of food quality and safety. As the Head Chef, you will be responsible for overseeing all aspects of food production, ensuring that our dishes are prepared to perfection while fostering a positive and efficient working environment.
You would be joining one of Scotland's largest and most respected independent Scottish hospitality groups who operate a diverse portfolio across the country. We are proud to serve quality, freshly prepared dishes from the finest local ingredients sourced from trusted Scottish suppliers.
Duties
Overseeing the daily kitchen operation, ensuring efficiency and consistency at all times.
Designing, costing and delivering menus and specials that highlight fresh Scottish ingredients and seasonal produce in collaboration with the company Executive Chef.
Leading the hiring, training and development of your kitchen team.
Working closely with the General Manager to plan rotas, managing rotas, managing labour budgets, and optimising kitchen performance.
Monitoring wastage, costings, and stock rotation, ensuring profitability and minimal waste.
Maintaining the CookSafe food safety system and ensuring full allergen compliance following company safety standards.
Following the company-approved supplier chain, purchasing products for quality and value.
Maintaining accurate documentation for recipes, costings and allergen information within company guidelines.
Qualifications
Proven experience leading a busy, high-volume kitchen.
Strong knowledge of menu planning, costing, and allergen management.
Excellent skills in ordering, stock control, and GP management.
Experience with CookSafe record keeping and food safety compliance.
Ability to inspire and motivate the team to deliver high standards daily.
Experience preparing all dishes from scratch using local produce.
Desirable Skills and Qualifications
REHIS Intermediate Food Hygiene or equivalent qualification.
Experience in achieving key kitchen KPIs including GP%, labour%, and EHO/internal audit performance.
Punctuality.
