up to 39,000 per annum basic 7500+ tronc per annum (based on last 3 years average) 1500 quarterly bonus based on hitting GP%, review targets and labour ratios up 55000 per annum potential total package Double Room available with (shared bathroom and kitchen, shared with 2 others) - 75 per week 48 hours a week. Work/life balance is key, once settled our previous head chef and kitchen team were working

4 days a week with 3 days off.

ABOUT OUR PUB



Our beautiful quintessential English pub is set in the picturesque village of Abinger Common. The Abinger Hatch has charm and a warm, bright, but cosy feel about it. In the summer months guests can enjoy a cool pint of beer or a glass of chilled wine in our delightful garden, whilst eating and relaxing with friends and family or come and sit by our alluring roaring wood fires, lit in the cooler, darker winter months. We have a beautiful twin tipi in the garden which is more often than not booked out for dining in the winter and perfect for functions in the summer

Our menu is all prepared in house using locally sourced fresh ingredients. We have a love of all things Game, with the local estate providing plenty of local produce.

With our current head chef moving on to a development chef role we are currently looking for a Head Chef to join the business and take us on to the next step. Every member of the team is vital to the business and we are looking for someone who is passionate about customer service and making sure every guest leaves happy.

Head Chef - Job Specification



The Head Chef is responsible for overseeing the running and profitability of their pub kitchen and managing their kitchen team. They know how to build a great team, deliver excellent customer service and bring the pub to life. As Head Chef you will lead and inspire your team to always do their best and provide the best guest experience possible.

HEAD CHEF ROLE & RESPONSIBILITIES:



Control and direct food prep processes including: Creating spec sheets - you will be creating the spec book not cooking from it. Prep and par levels. Creating menus and adhering to set deadlines for this: Autonomy to create seasonal menus, specials, themed evenings etc., creativity is key. Prepare, cook and present amazing food in accordance with our standards. Running the kitchen in all aspects including: Running day to day and key shifts. Menu preparation. Cleanliness and health & safety including records and compliance. Ensuring continually high standards of food quality and freshness. Monitoring ordering and stock holding. Waste management. Maintaining kitchen equipment.
Overseeing the kitchen team in all aspects including:

Hiring Rostering Training Developing - Appraisals Delivering high volume services with food always delivered to tables in a timely manner. Always adhere to safety and hygiene regulations. Being a valuable part of the wider team to ensure the best guest experience. Always have a focus on guest experience. Participate in PR and Marketing activity when requested and required. Reporting to General Manager of the business.

WHAT WE LOOK FOR IN A HEAD CHEF:



Passion for working with fresh food, including gluten free, dairy free and vegan menus we have become known for To be able to breakdown produce from field to fork eg whole deer and fresh fish Great eye for detail Enjoys being and wants to be an active member of a team Excellent verbal communication An understanding of what amazing guest service looks like Always looking push themselves to progress to that next step Previous experience in a high volume fresh food pub. Own transport required but live in also possible

Pay: 38,000.00-46,000.00 per year
