The Fox is a village pub at the heart of the community with crackling log fires and a welcoming bar specialising in local beers and cocktails. The menu celebrates local producers including our sister farms at Daylesford Organic and Wootton.

ABOUT THE ROLE

As a hands-on chef, you must be confident running all sections of a fast-paced, high-end pub and this begins with providing Instant Service with a smile!


You will be cooking with the very best (largely organic) produce, with a focus on simplicity, sustainability, and seasonality -- all to a very high standard. A significant amount of our ingredients come from our own neighbouring organic farm.


You are our ambassadors, and will always be enthusiastic in all interactions with guests or colleagues and know your subject in order to make recommendations, and promote The Wild Rabbit, Daylesford & Bamford, and to help educate your colleagues on our offering and history.


You should be a keen foodie who keeps up to date with the latest food trends and techniques, while maintaining a solid foundation in traditional cooking.

SALARY:

45000 - 50000 plus tronc

HOURS:

48 hours Full Time - Weekends included




RESPONSIBILITIES



Champion the quality of food across all areas of the business Use estate-grown produce wherever possible to showcase our farm-to-fork philosophy Collaborate with the Executive Chef to ensure menus evolve in line with our pub food identity, seasonality, and operational deliverability Stay informed on current food trends, ingredients, and techniques to keep offerings fresh and relevant Set a strong example for the team through professionalism, high standards, work ethic, and personal presentation Support recruitment by hiring the right people for the right roles; CDP-level and above must be approved by the Executive Chef Develop, train, and coach your team through regular appraisals and by using Daylesford Farm to create meaningful food experiences Foster a positive, motivated, and focused team environment by bringing fun and enthusiasm to the workplace Maintain open communication and collaboration with the Executive Chef and General Manager Keep sous chefs informed on day-to-day plans, menus, compliance, and kitchen management Work jointly with the Executive Chef and GM to deliver sales and margin targets Understand and manage the kitchen's gross profit in line with budgeted targets Schedule rotas effectively to meet wage cost targets while supporting team wellbeing Manage annual leave fairly across the team, ensuring proper coverage during key business periods Oversee ordering to ensure full availability with minimal waste Record and manage invoices and credit notes accurately Monitor and log monthly stock levels with the stocktaker to ensure inventory accuracy Track and report wastage consistently to aid in cost control Encourage an efficient, knowledgeable, and enthusiastic front-of-house service through briefings and menu training Maintain a safe, compliant kitchen environment by upholding food safety and health & safety standards Ensure all kitchen areas (internal and external) meet internal audit and hygiene requirements Implement and reinforce allergen procedures, ensuring all team members are fully trained and compliant Make sure all kitchen opening and closing procedures are followed and properly documented Address maintenance issues promptly to keep kitchen equipment safe and functional, and respond swiftly to audit action points Bring our purpose to life by driving meaningful social and environmental improvements, contributing to our journey as a B Corp, and aligning with our sustainability vision. SKILLS YOU WILL BRING



Demonstrated experience working in a high-calibre kitchen environment, such as multi-rosette or Michelin-starred establishments, with a deep understanding of quality and precision Maintains composure and clear decision-making under pressure, contributing to a calm and focused kitchen atmosphere during high-stress service periods A driven and dedicated leader with a strong work ethic, inspiring and motivating others through example and clear direction Possesses a solid understanding of kitchen dynamics, with the ability to identify opportunities for junior team development, improve workflows, and enhance overall productivity
