Be experienced with performance management, provide positive feedback where due, and professionally deal with poor performance when necessary.
To meet and exceed agreed KPI's including GP's, loss/wastage and labour. To manage the kitchen in a professional and business-like manner. To meet and exceed COSHH, Health and Safety and Food Hygiene Regulations.
Be able to deliver food led menus within agreed timeframes, ensuring all costings, safe & legal and implementation processes are complete.
To manage and maintain all cooking equipment within the kitchen, while continually looking at new methods and processes to encourage efficiency.
To be accountable for all kitchen stock control, ensuring robust processes are in place to safely manage, account for, and store all purchases through the food chain.
To always communicate clearly and professionally. To provide regular performance reports to park managers, and ensure that vital information is passed through the department.
