Montalto Estate is seeking an experienced and proactive Head Chef to lead our cafe kitchen team in delivering first-class catering to our members, guests, and visitors. You will be responsible for the development, planning, and co-ordination of a range of catering activities across the business, including our cafe, events, and private functions. The ideal candidate will balance culinary creativity with strong financial acumen and leadership skills to maintain our high standards of hospitality.
Responsibilities
Operational Leadership:
Oversee daily kitchen operations, including food preparation, cooking processes, and the implementation of standard procedures for all dishes regarding timing and quality.
Menu & Innovation:
Develop and design innovative, seasonal menus that reflect Montalto's commitment to quality while adhering to established specifications. Lead quarterly cafe menu development; curate a rotating selection of specials and oversee catering for group bookings. Stay on or ahead of culinary trends while thoughtfully acknowledging and catering to our specific target markets.
Estate Development:
Collaborate on the creation and execution of unique dining experiences and bespoke events across the estate.
Financial Management:
Monitor performance against budget headings in conjunction with the Finance Manager and Operations Director. Manage inventory, ordering, and stock management systems to ensure value for money and optimised profitability.
Team Development:
Supervise, mentor, and direct kitchen sections, providing coaching and technical advice to ensure maximum flexibility and skill use across the team. Lead the on-boarding process for all staff, including both permanent team members and temporary/seasonal support.
Safety & Compliance:
Ensure all staff are conversant with Health & Safety and HACCP responsibilities, maintaining a clean and organised environment.
Collaboration & Communication:
Liaise with the Cafe Manager and front-of-house staff to identify future growth and ensure seamless customer service. Maintain clear and proactive communication with all other estate departments to ensure synergy across the business.
Professional Standards
Maintain a high level of personal appearance and behaviour, acting as a role model for the kitchen team.
Experience
Minimum 2 years of experience in supervising, food safety, and food preparation within a hospitality environment.
Technical Proficiency
Must provide examples of handling food costing software or using Excel for same.
Leadership
Proven ability in decision-making, task management, and problem analysis.

Communication
Strong communication skills and the ability to work collaboratively across various departments.
Mandatory Commitments
Admin. windows:
Adherence to set non-negotiable administration windows for kitchen management.
Meetings:
Attendance at a mandatory face-to-face meeting every week (30 minutes).
