Head of Coffee - Mouro Coffee Roastery

Location: Mouro Coffee Bar & Roastery, 8-10 Oxford Rd, Altrincham, WA14 2DY

ABOUT MOURO

Mouro is an exciting independent coffee brand with 2 sites currently in south Manchester. The first launched in August 2024 and the second which boasts the Mouro Roastery opened in August 2025 Our sites are design-led neighbourhood coffee bars with a strong focus on quality, hospitality, community, and experience.

We are a forward-thinking, creative brand with a passion for exceptional coffee, great service and considered, modern spaces. We are driven by quality, innovation and a desire to build a meaningful, long-lasting presence in the local coffee culture.

We are now looking for an experienced, passionate and proactive Head of Coffee to help lead and develop our coffee programme as we enter this next stage of growth. This is a senior, hands-on role at the heart of our brand, based at our Altrincham roastery. We need someone who will bring expertise, energy and ambition - someone who believes in what we're building and wants to be a key part of shaping our future.

ABOUT THE ROLE

You will oversee core aspects of the coffee operation - from green coffee sourcing and roast development to quality control, wholesale account management and staff training. You'll help elevate and maintain our coffee quality, consistency, and reputation, supporting the continued growth of our brand and the experience we deliver.

Experience in a Head of Coffee role is essential.

KEY RESPONSIBILITIES

Coffee Programme & Quality

Source green coffees aligned with our vision, values and seasonal strategy Contribute to and refine roast profiles that balance quality, drinkability and cost Lead cuppings, sensory evaluation and QC protocols Create, maintain and improve recipes for all brewing methods (espresso, batch, filter, etc.) Implement systems to monitor quality and minimise waste Ensure compliance with food safety standards and accurate product documentation
Training & People Development

Train and mentor all staff on our coffees, brewing standards and customer experience Conduct regular site visits to ensure consistency, quality and operational standards Implement training programmes for new staff and ongoing upskilling Maintain and update coffee manuals, recipes and SOPs
Wholesale & Business Development

Identify, win and onboard new wholesale accounts Build strong, positive relationships with wholesalers to ensure growth and retention Provide ongoing support, training and QC to partners Work to achieve KPIs and revenue targets Represent the brand with confidence, professionalism and enthusiasm
Operations & Support

Be flexible day-to-day, covering barista breaks/shifts when required Support menu development, seasonal drinks and innovation Manage stock levels, ordering and cost control Maintain roastery organisation, cleanliness and safety Report performance, challenges and opportunities, proposing solutions proactively
What We're Looking For

Proven experience in a Head of Coffee role (non-negotiable) Excellent interpersonal and communication skills Proven ability to win new business and manage accounts strategically Professional, reliable, presentable and personable Passionate about coffee, detail-oriented and proud of your craft Strong sensory skills and QC experience Hands-on roasting experience and understanding of roast profiles Ability to design and communicate coffee recipes clearly Flexible and willing to assist across the business when needed Organised, proactive and solutions-focused Positive energy, brand pride and a genuine desire to help grow the business
Desirable Skills

SCA certifications or equivalent coffee education Experience managing a team or leading training programmes Strong commercial awareness and KPI focus Knowledge of green coffee purchasing and logistics Experience with roasting software and QC platforms
