Plas Dinas Country House and The Gunroom Restaurant is a 5multi-award-winning country house, winner of Best Hotel in Wales in and Best Place to Eat in Wales at the Visit Wales Tourism Awards 2025, Best For Romance in the UK at the Conde Nast Johansens Awards 2025 and is the former home of Lord Snowdon.
We are now looking for a dynamic experienced Manager with experience of working within an exceptional full service restaurant and equivalent hospitality environments. This is an additional role to support our developed team who are now working to capacity, after significant investment in the beautiful business over the last six years. Our guests are our priority and our team make this beautiful business what it is.

The Gunroom Restaurant offers exceptional food, an intimate dining experience and requires a duty manager to now take the service level forward even further in partnership with our hotel Deputy Manager and our Head Chef who was a finalist on Great British Menu this year. We have a lovely, talented, dedicated team who have worked for the company for many years. Having achieved the coveted accolade of being listed in the Michelin Guide, the restaurant team and our incredible chefs are now working towards our first Michelin Star.

You will bring with you deep and passionate understanding of what it takes to deliver a memorable experience - through significant online presence development, through the talent of your teams, the entire operational lifecycle, and being able to communicate the right messages at the right times. You will have an impeccable collaborative approach to working with people and will be responsible for maintaining this exclusive partnership with our guests ensuring our expected standards are always maintained. You will have a long-term vision for understanding the capability of the restaurant; be able to set plans and to deliver exceptional standards of service to our guests from all over the world. Our guests are fine dining lovers and travel around the world experiencing the Michelin gastronomy scene. We are a year-round business with a strong following and consistent bookings. We all work very hands on to deliver exceptional service and attention to detail and storytelling is the through-line of what we do at Plas Dinas.
