Job Description

Nortons Digbeth is seeking an enthusiastic, hardworking, and ambitious Junior Sous Chef to join and grow with our vibrant kitchen team. We are a fast-paced establishment known for quality food that complements our lively atmosphere, specializing in Full Irish breakfasts, traditional Sunday roasts, and our unique, authentic Irish pizzas.

The successful candidate will be a key support to the Head Chef and Sous Chef, assisting in the daily management of kitchen operations, maintaining high standards of food quality and hygiene, and developing their leadership skills. This role is a perfect stepping stone for a skilled Chef de Partie looking to advance their career.

Key Responsibilities



Culinary Execution & Quality Control

Prepare and cook all menu items to the highest standards, consistently maintaining Nortons Digbeth's quality and presentation specifications. Special emphasis on executing fantastic breakfast services, gorgeous Sunday roasts, and authentic Irish pizzas. Demonstrate a keen eye for detail in plating and food presentation. Ensure consistency in all dishes served across various sections.
Kitchen Support & Operations

Assist the Head Chef and Sous Chef in daily kitchen operations, including receiving deliveries, inventory checks, and stock rotation. Take responsibility for a specific section (e.g., Larder or Pass) during service as directed. Maintain a clean, organized, and safe working environment, adhering strictly to all food hygiene and safety regulations (HACCP). Work effectively and efficiently in a fast-paced environment, assisting in managing time and resources during peak service times.
Team Development

Assist the Sous Chef and Head Chef in mentoring and guiding Commis Chefs and junior kitchen staff. Promote a positive and professional work environment, fostering enthusiasm for good food and high performance. Lead by example in all aspects of kitchen conduct and performance.
Menu & Cost Control Assistance

Assist the senior team with recipe preparation, testing, and understanding cost control measures. Provide input on new ideas, especially within our key areas of focus: breakfasts, roasts, and pizzas.

Essential Requirements



Proven experience as a strong Chef de Partie or equivalent role in a high-volume, fast-paced kitchen environment. Practical knowledge and experience in preparing and cooking breakfasts, Sunday roasts, and dough-based/pizza items. Strong enthusiasm for good, high-quality food and a passion for culinary excellence. Excellent organizational skills and a meticulous approach to work. Up-to-date knowledge of food safety and hygiene practices (Level 2 Food Safety certification or equivalent required). Ability to communicate clearly and effectively with both kitchen and front-of-house staff. Must be able to work flexible hours, including evenings, weekends, and holidays.

Desirable Skills



Experience assisting with stock control and minimizing waste. Knowledge of Irish cuisine/cooking techniques is a bonus. Demonstrable ability to manage a busy section independently.
