Applications from an experienced CDP or junior sous chef looking to take the next step in their career will also be considered. An ambitious candidate with the right attitude will be preferred over one with experience alone.
The ideal candidate will have experience in a similar restaurant environment and have a good level of experience working with fish and shellfish.
This is a full time position over 4 days with 3 days off per week. Shift patterns are currently 3 doubles and one single although this may be subject to change.
Average hours per week is approximately 45.
A substantial gratuity package is on offer in addition to the base salary.
We close for approximately 2 week every year from Christmas Eve giving all staff Christmas and New Year off.
Duties
Assist head chef and owner in the daily running of the kitchen and act as the head chef in their absence.
Learn from and assist the head chef with training of existing staff
Have input into dishes and the menu. The correct candidate should be capable of creating/producing dishes suitable for the menu within a short time after starting in the role.
Assist head chef with all organisational aspects of the kitchen including ordering, costing, rotas, cleaning schedules and maintaining EHO records and documentation.
Requirements
Previous experience preparing and cooking a wide range of fish & shellfish will be hugely beneficial. Training will be provided if necessary though.
An understanding of food cost, pricing and the ability to maintain/achieve a set profit margin is very important.
In depth knowledge of food preparation techniques and culinary skills.
In depth understanding of food safety practices and hygiene standards and preferably an up to date hygiene certificate
Ability to work effectively as part of a small team and a willingness to participate in all tasks within the kitchen no matter how small.
Strong communication skills and a willingness to learn from the head chef and owner plus the ability to be able to pass this training on to more junior staff.
Ability to work in a clean, tidy and organised matter at all times, especially during service as the kitchen is in full view of our guests.
