Job Title: Kitchen Manager



Reports To: Executive Chef



Department: Food and Beverage



Salary: 37,000 - 40,000



Contract Type: Full-Time, Permanent



Role Summary




To manage the operational, compliance, and financial performance of the hotel's main restaurant kitchen, ensuring high standards of cleanliness, food safety, and cost control.

Key Responsibilities



Operational Leadership



Oversee daily kitchen operations Prepare, cook, and present food to specification Oversee food preparation and cooking Ensure food plating is to specification and quality standards Manage stock, ordering, and suppliers Monitor food costs and wastage Ensure kitchen opening and closing procedures are adhered to

Training & Development



Deliver training on FSMS requirements Ensure training materials, kitchen documents and policies are displayed and up to date Ensure team are trained on and follow specification sheets Coach team on compliance and kitchen standards

Team Leadership & Management



Support recruitment and onboarding Conduct team briefings and performance reviews Manage rota and ensure adequate staffing Ensure all accidents, incidents and serious food complaints are logged in accordance with company policy Manage and report on the Food Safety Management System (FSMS) Ensure HACCP logs and allergen procedures are followed

Stock Control



Support Executive Chef in maintaining spec sheets Responsible for costing dishes and achieving GP targets Manage inventory systems (Procure Wizard, Access POS) ensuring accuracy and accountability

Key Performance Indicators (KPIs)



Food GP% and waste reduction Audit and compliance scores Labour costs% Cleanliness and hygiene standards
