Role overview
To support the Head Chef and the rest of the team to ensure that food offered to guests is of a consistently high standard by preparing and presenting food of the highest possible quality in accordance with company procedures. To work with the kitchen team and as part of a wider team with all the serving and banqueting staff. To adhere to the Together Travel values and brand guidelines.
Responsibilities:
To ensure that all deliveries of food is checked at time of unloading, correct temperature, secure packaging and handled correctly as per HACCP
All food entering the kitchen is correctly stored in rotation
To keep the fridges clean and tidy
To be fully aware of all items on the menu and of the recipes and quantities
Prepare mis-en-place for all relevant menus.
Being responsible to ensure that there is no cross contamination of food
To be aware of and to control wastage of food
To ensure that all documentation is kept such as cooking temperature records, fridge temperatures and cooking temperature records
To follow all procedures such as cleaning schedules, rotation of perishable and dry stocks maintaining equipment
Reporting any problems to the Head Chef
To interact with all Together Travel customers in a friendly, welcoming, consistent manner.
To have strong knowledge of all products and services on offer and be able to pass on this knowledge in a positive, enthusiastic style.
Ensure prompt replenishment of stock and highlight to the relevant manager any stock issues e.g.: stock loss, damaged stock.
To maintain cleanliness and tidiness of all equipment in the kitchen at all times and carry out deep cleaning of floors and all equipment
To maintain a high level of personal grooming and always wear the correct Together Travel uniform, which must be kept clean and presentable at all times.
When handling food and refreshments ensure that all requirements of Food Hygiene legislation are met.

Experience
Delivering a high level of service in a professional and busy kitchen environment
Full knowledge of food hygiene regulations HACCP
Ideally SVQ level 1
