As Lounge Manager at Nobu Hotel London Portman Square, you will take full ownership of The Lounge as an independent revenue centre; driving strategy, profitability and service excellence. This is a leadership role that combines operational precision with creative vision, ensuring The Lounge remains a destination for luxury dining and crafted hospitality.
You will
Lead the strategic and operational management of The Lounge, delivering exceptional guest experiences
Maintain a strong, visible presence during afternoon and evening service periods, upholding luxury standards
Analyse sales and profitability, implementing plans to achieve revenue and growth targets
Own full PL responsibility, including accurate forecasting, budgeting and cost optimisation
Develop and execute innovative wine, sake and cocktail programs in collaboration with suppliers
Design and deliver creative promotions, collaborations and seasonal activations to drive engagement and revenue
Inspire and mentor your team to maximise upselling opportunities and elevate guest experiences
Partner with FB Marketing to position The Lounge as a key destination and grow the customer database
Monitor inventory and ensure alignment with budgeted cost of sales
Ensure correct use of MICROS, cash handling and reservation systems to optimise covers and profitability
Recruit, coach and develop a high-performing team, creating succession plans and fostering a positive culture
Take ownership of performance management, appraisals and colleague development
Actively review guest feedback, celebrate successes and identify areas for continuous improvement
Contribute to the hotel's strategic direction as part of the Senior Management team
Perform other leadership duties as required
What We're Looking For
You bring proven leadership experience in luxury hospitality, with strong financial and commercial acumen. You are innovative, guest-focused and thrive in a role where creativity meets operational excellence. Expertise in wine and beverage programs (WSET or equivalent preferred) and a track record of delivering measurable revenue growth are essential. With exceptional communication skills and a hands-on leadership style, you will inspire your team and elevate Nobu's Lounge experience.
