Job Description

RHS Rosemoor Food and Beverage Department is seeking an experienced Pastry Chef to lead and implement change to this key area of the business. With 250,000+ visitors to site our sweet offer needs to be Wow!

Your expertise will be crucial in bringing innovation, structure and competence to the department, which will enhance the visitor experience, while maintaining alignment to our budgets to ensure profitability.

You'll have the freedom to design a menu featuring seasonal cakes, desserts, and afternoon teas, utilising produce from the garden, when available.

Responsibilities:



Lead the pastry section in collaboration with the Lead / Head Chef. Continuously develop innovative sweet pastries, bakery products and desserts to refresh our menus and attract customers, in terms of the visitor attraction and for hospitality events. To monitor trends, account for seasonality, and utilise garden produce when available. Achieve agreed gross margin by accurately costing and delivering the inhouse bakery products. Work efficiently, identifying areas for savings through planning and reduction in wastage. Monitor ingredient stock levels to ensure levels are appropriate to produce the bakery menu. Decocate all sweet products to enhance their presentation to excite our customers and increase income. Promote the RHS behavioural framework, by encouraging a positive working ethos, high standards and collaborative working. Offer colleague guidance, via instruction to enhance skill development and promote team involvement. Engage with the senior management team to drive business growth. To have a full understanding of Allergens and their implication on the menus and the business as a whole. To adhere to the established working practices that ensure our due diligence. Record and update HACCP data required by law to uphold our due diligence. Manage the kitchen team as required, when other senior team members are away.

Qualifications / Experience



KNOWLEDGE



ESSENTIAL:

Qualified Chef - 706 1 and 2 or equivalent Level 2 Food Safety Allergen training / qualification
DESIRABLE:

Qualification - 706 / 3 patisserie or equivalent Level 3 Food Safety

EXPERIENCE



ESSENTIAL:

Minimum two years experience in patisserie /bakery section
DESIRABLE:

Two years or more experience managing a patisserie /bakery section overseeing staff within a large volume business
