Pastry Sous Chef
. This is a unique opportunity to work in one of London's most respected kitchens, leading a passionate pastry team dedicated to excellence.
As
Pastry Sous Chef
, you will play a key leadership role in the development and execution of all pastry offerings, from plated desserts and afternoon tea to chocolate, sugar, and viennoiserie work. You will work closely with the Head Pastry Chef to inspire and train a growing brigade while upholding the highest culinary and hygiene standards.
Key Responsibilities:
Oversee the
preparation, production, and presentation
of all pastry items to five-star standards.
Manage and mentor
a team of Pastry Chefs, including Chef de Parties, Demi Chefs, Commis Chefs, and Apprentices.
Drive the development of seasonal menus and signature pastry creations.
Maintain excellent standards in food quality, presentation, and consistency.
Supervise
mise-en-place
, portion control, and
stock rotation
to ensure efficiency and minimise waste.
Ensure all kitchen areas and equipment are kept
immaculately clean and compliant
with health & safety regulations.
Ideal Candidate:
Proven experience as a
Pastry Sous Chef
or strong Senior Chef de Partie ready to step up, ideally within a luxury hotel or fine dining restaurant.
Strong technical skills in
classical and modern pastry techniques
, including chocolate work, sugar art, and French/Italian pastry styles.
Confident in leading a team in a
fast-paced, high-volume
environment.
A natural mentor with a passion for
training, development, and team motivation
