The Role
This is a hands-on leadership role. You'll manage service across multiple areas -- upstairs dining, downstairs restaurant/bar, and poolside seating -- and support the team through busy days, seasonal peaks and everything in between.
We're not looking for someone to come in and change everything. The foundations here are strong. What we need is someone who can observe, get to know the team, understand what works, and help build on that.
This role would suit someone who's already worked in a high-volume, quality-led venue and is ready for the next step -- with a focus on people, detail, and consistency.
What You'll Be Doing
Leading daily service with confidence and consistency
Coaching and supporting a well-established front-of-house team, as well as helping to recruit and retain new staff.
Managing team rotas and day-to-day operation.
Maintaining relationships with kitchen and spa management to ensure a smooth flow.
Monitoring and managing key performance indicators including labour costs, wage percentages, GP targets and efficiency metrics
Maintaining high standards in service, presentation and guest experience
What We're Looking For
Proven experience running busy restaurants across multiple sections
A practical, calm and confident leader -- good under pressure and clear in communication
Someone who values structure and systems but is flexible when needed
Strong eye for detail, with high expectations for service and quality
Knowledgeable about food, wine and hospitality
Genuinely interested in developing people and building a strong team
Able to see both the bigger picture and the small things that matter
